A special cider from a star team of 5 Champagne Growers! (Quentin Paillard, Adrien Renoir, Bertrand Lapie, Antoine Bouvet and Flavien Nowack)!
This cider was made following the principles of Champagne winemaking rather than traditional cider methods.
Made from organic and biodynamic apples and pears from old trees (some up to 250-year-old), fermentation was in oak for 1 year, followed by second fermentation in bottle using natural sugar from apples and pears. Finally, cider is kept on lees for at least 12 months before release.
