Domaine des Marnes Blanches is a visionary estate founded in 2006 by Pauline and Géraud Fromont, a dynamic couple who transitioned from agricultural roots to become celebrated winemakers. Spanning 10–12 hectares across the villages of Cesancey, Vincelles, and Ste-Agnès in Jura, the domaine is named after the distinctive white marl soils of Cesancey, though its vineyards also thrive on red marl, fossilized limestone (gryphées), and limestone-rich terroirs. Certified organic from inception (Ecocert) and practicing meticulous, hand-harvested viticulture, the Fromonts prioritize sustainability and terroir expression, with vines aged up to 100 years old and rare biotypes like Savagnin Muscaté adding depth to their portfolio.
The estate's winemaking philosophy balances tradition and innovation. Their wines are divided into two stylistic categories: Reflet (topped-up, ouillé) and Empreinte (sous-voile, oxidative), reflecting either pure terroir or the imprint of flor yeast aging. Fermented with native yeasts and aged in neutral oak, stainless steel, or concrete, the wines are crafted with minimal intervention - sulfur use is sparing or omitted entirely, particularly in reds like Poulsard and Trousseau, which undergo semi-carbonic maceration for vibrant, delicate profiles. Standout cuvées include the Savagnin En Quatre Vis (from 1958 vines on white marl) and Chardonnay Empreinte Sous Voile, aged 36 months under flor for nutty complexity.
Beyond classics, the domaine produces acclaimed Crémants aged up to 24 months on lees, a rare Vin Jaune aged seven years under flor, and Vin de Paille from air-dried grapes. Their experimental side project, Coup de Jus, showcases playful négociant wines from organic Gamay, Grenache, and Alsace varieties, underscoring their creative ethos.
Praised for purity, tension, and "crystalline" minerality, Domaine des Marnes Blanches has garnered critical acclaim, with wines like Les Molates Savagnin lauded for its briny acidity, wild minerality, and savory depth. With annual production capped at 7,000 - 9,000 cases, each bottle embodies Jura's artisanal spirit, marrying tradition with the progressive vision of a new generation.
All of their parcels are vinified separately, known as ouillé by the local, a rather contemporary concept in Jura. The wines are and aged in either stainless steel or neutral cask, with minimal use of sulfites. Geraud and Pauline are much influenced by Burgundy and Champagne's Viniculture and Vinification, as Geraud studied in Macon, Dijon and Reims, while Pauline in Dijon.
