Sweet Torcolato is made from late harvest and air dried Vespaiola. The best bunches of grapes are twisted, winded, and hung by means of strings, then dried "da appassimento naturale" , and aged in new barriques for 36 months before bottling.
Torcolato is considered to be one of the best sweet wines of Italy. Like the best aged Sauternes but with more concentration and acidity, many tasters commented that this is the best sweet Italian wines they have ever tasted!
We recommend to match Torcolato with Cheese, dried fruits, or ginger Panna Cotta.
